Transatlantic Foods: Aux Délices des Bois Herb Pancetta Herb Pancetta, with its thick rub of spices, reinvents the traditional recipe inherited from the original East Coast butcher shops. This product uses hand-selected bellies from family-owned farms that practice humane treatment of animals, provide a vegetarian diet and use no hormones or antibiotics. The artisanal production takes the slow-food route by curing and finishing by hand and skipping artificial nitrates.
