user rating The traditional cuisine of the Central Asian country of Uzbekistan relies on seasonal and local fruits and vegetables such as apricots, melons, pomegranates, pumpkins, eggplants, turnips and tomatoes. Common flavoring spices and herbs are black cumin, sesame seeds, cilantro and barberries (from the pungent evergreen shrub). In addition, rich dairy products abound including katyk (a yoghurt made from sour milk) and suzma, which is similar to cottage cheese.
Breads are popular such as flatbread and palov, a traditional Uzbek meal comprising of fried meat, rice, carrots, raisins, chickpeas and barberries. Other dishes include tomato-cucumber salad and barra kabob, marinated lamb skewered and charcoal grilled.
Tea is a popular beverage of Uzbek culture and desserts include fig or quince jam (often served with tea), baklava and sugared apricot seeds.—Leska Tomash
