user ratingThe Virgin Islands lie in the Caribbean Sea and are divided into the United States Virgin Islands and the British Virgin Islands. The USVI include St. John, St. Croix, St. Thomas and Water Island; the BVI covers Tortola and Anegada, among others.
The cuisine melds influences of European, American, African and indigenous peoples. Callaloo soup is a dish found throughout the Caribbean and comprises the leafy greens of the daheen plant, okra, herbs and meats or seafood. Roti, of Indo-Trinidadian origin, is thin dough wrapped around curried meat and vegetables. For fresh seafood try mahi mahi, yellowtail or red snapper in a hot lime sauce. Stewed oxtail or goat is popular as well as snacks such as pate (pah-teh), a fried bread stuffed with beef, saltfish or chicken and the pastry known as johnnycakes.
Like most of the Caribbean, rum is popular in the Virgin Islands, in particular Cruzan Rum from St. Croix. The customary drink mauby is made from boiling mauby bark with cinnamon and other spices. Desserts include sweet potato pie and exotic fruit ice cream.—Leska Tomash
